When Jesus breathed his last and was pronounced dead; why did The Roman centurion glorify god?
The centurion is struck by Jesus human courage in facing the suffering in the name of the Father. The physical pain is extreme. The question of honor is dear to a true soldier - faithful till physical death. Its the trust in the Father that is mind and heart blowing for him. There is a breakage death like in the veil like Heaven and Earth were joint when Jesus was born - God becoming human - so now he leaves the earth. It`s a sign of deep pain and cataclismatic end of the times. But like he said to the disciples when all seems to collapse be steadfast. No fear. Full trust. As I am.

Bonus question: Why was the veil torn in two? The sun was darkened, and the veil of the temple was torn in two
I believe the veil ''which was a curtain'' was what symbolized separation of God. Only the chief priest could go behind the veil and then only once a year and only with a blood sacrifice.

Jesus' Death

It was now about the sixth hour, and darkness came over the whole land until the ninth hour. The sun was darkened, and the veil of the temple was torn in two. Jesus, crying with a loud voice, said, "Father, into your hands I commit my spirit!" Having said this, he breathed his last.
When the centurion saw what was done, he glorified God, saying, "Certainly this was a righteous man." All the multitudes that came together to see this, when they saw the things that were done, returned home beating their breasts. All his acquaintances, and the women who followed with him from Galilee, stood at a distance, watching these things.
