Why did Jesus´ penalty for "sin" need to include physical and emotional pain - why not just spiritual separation from God?
Jesus had to physically die because His death replaced the need to offer sacrifices to God. Jesus was the final sacrifce, allowing us to be in the presence of God. Though the spirtual separation from God would cause emotional pain Jesus had to experience the physical pain in order to duplicate the sacrifices that were needed before Jesus' death.

How do we have freedom of choice when God already knows everything?

"Was Jesus trying to incite his death (eg. temple cleansing, accusation of leaders?)
Jesus did not need to incite his death as it had already been written. However, everything that Jesus did was for a purpose, and since He is all knowing he knew that this would provoke them to a greater degree of anger and hate.

Jesus said that He did not come to change the law. In the Old Testament there can be no atonement for sin without the shedding of blood. In the Book of Philippians - And being found in fashion as a man, he humbled himself, and became obedient unto death, even the death of the cross. So going to the cross- the pain - the suffering - He humbled himself to His Father. Jesus also said take up your cross and follow me. Our cross is not something that we can do nothing about - it is something that we do - freely - we may not want to do it - but God wants us to do it. Jesus said Not my will but yours Father. Jesus did not have to go to the cross - but He did for you and me.

because we fall short all the time and to actually comprehend it there needs to be an aspect we can understand this being physical pain

Jesus was man as well as God.  We, as man, cannot comprehend God - we just strive to.  As 'man' we understand physical and emotional paid and so Jesus suffered in a way we could understand.

Jesus had to show future generations that He too had experienced pain, anxiety, depression, and fear so that we would be able to relate to Him. So that we could believe.

Because if his death was only separation from God all that he done would have been worthless for furture generation to come, knowing that he identified our physical and emotional pain makes us identify with him. He was wounded for our transgression, the weight of the world was upon his shoulders past, present and furture.

No I do not believe that Jesus was trying to incite His death.  Jesus had a specific mission - to reconcile man to God i.e by His crucification and resurection from death.  He knew that no-one could harm Him in any way until the time for His crucifiction had come.  On numerous other occassions the pharisees and sadducees had attempted to stone Jesus - and He simply walked away from them.  In talking against the Religious leaders, Jesus was highlighting their sin and offering them an oportunity to repent.  Jesus ministry revolved around repentance from sin and being reconciled to God.  Even though Jesus knew that the leaders would crucify Him, Jesus still loved them and offered them the opportunity to repent - but most refused, chosing rather to hate Him and be angry.  Everything Jesus did was to honour the Father and to illustrate to the people that they were in sin and without Jesus could not come to the Father.
