Why did Jesus insist on healing on the Sabbath when the Pharisees taught this was sin?

I believe it was done for the betterment of the Pharisees. They had sight, but in a lot of respects, they could not see. JESUS giving sight to a blind man helped not only helped him to see, but showed everyone that he was the light and the truth and all that believe will have eternal life.

Why were the Jews so angry that Jesus claimed to exist before Abraham was born?

Because they were closed minded and could only see things as they exist on earth. Specifically, their reasoning suggested that it would be impossible for JESUS at his current age to know of Abraham. They could not comprehend the fact that JESUS knew of Abraham in the spiritual life. As such, they felt JESUS was a blasphemer, which is the reasoning for their anger.

Why didn`t Nicodemus accept the opinion of the rulers and Pharisees about Jesus?
Nicodemus is very interesting for he had an open mind and after listening to JESUS he was touched by his words (which come from GOD) and teachings. Nicodemus perhaps touched by the holy spirit began to believe that JESUS was so much more than just a prophet, even though this would not be considered amongst the rest of the rulers and Pharisees.

What was there about Jesus` message caused so many of His disciples to turn away?

Perhaps, after exposing them to the truth, they were unable or unwilling due to fear, disbelief and or lack of faith to follow JESUS.

How does one, in our current day eat the flesh of Jesus and drink His blood?

Symbolically, by participating in Holy Communion.
