Because Jesus challenged to those who insisted that observing strictly of the Sabbath should be its own goal.

Why were the religious leaders so upset that Jesus would heal on the Sabbath (religious day off)?
Jesus never told anyone to keep the Sabbath. Although we are told various things that he did on the Sabbath, we are never told that he rested. According to the Gospels, what he did and taught on the Sabbath was consistently liberal.Jesus lived sinlessly under the old covenant requirements ''Hebrews 4:15''. He was born under the law, while the old covenant was still in force ''Galatians 4:4''.so jesus not resting on the sabbath angers the pharisees&jesus replies with an example from king david Haven`t you read what David did when he and his companions were hungry? He entered the house of God, and he and his companions ate the consecrated bread ¨ which was not lawful for them to do, but only for the priests Jesus` point here regarding the Sabbath is that the letter of the law is not a reliable guide to holiness. People should be judged on the heart, not on superficial actions.Healso said to them, The Son of Man is lord of the Sabbath. jesus is more important than the temple and its sacrifices. The logical conclusion is that he is also more important than the Sabbath. Even before his death and resurrection, he was more important than the Sabbath.jesus wants to teach them that the rules were made to be followed and not worshipped&that the creator is more important than the created i.e God and his will is more important then the lwas and scriptures

Lord of the Sabbath

Now it happened on the second Sabbath after the first, that he was going through the grain fields. His disciples plucked the heads of grain, and ate, rubbing them in their hands. But some of the Pharisees said to them, "Why do you do that which is not lawful to do on the Sabbath day?"
Jesus, answering them, said, "Haven't you read what David did when he was hungry, he, and those who were with him; how he entered into the house of God, and took and ate the show bread, and gave also to those who were with him, which is not lawful to eat except for the priests alone?" He said to them, "The Son of Man is lord of the Sabbath."
It also happened on another Sabbath that he entered into the synagogue and taught. There was a man there, and his right hand was withered. The scribes and the Pharisees watched him, to see whether he would heal on the Sabbath, that they might find an accusation against him. But he knew their thoughts; and he said to the man who had the withered hand, "Rise up, and stand in the middle." He arose and stood. Then Jesus said to them, "I will ask you something: Is it lawful on the Sabbath to do good, or to do harm? To save a life, or to kill?" He looked around at them all, and said to the man, "Stretch out your hand." He did, and his hand was restored as sound as the other. But they were filled with rage, and talked with one another about what they might do to Jesus.
