Why did Jesus use the greeting. "Peace be to you"? Was there special signiificance in this greeting?
The disciples are afraid of the Jews that had killed
Jesus...fear maybe also nourishing hostility against those who killed their Master.
Jesus appears and shows them the memory of the
atrocities he underwent for everyone not just for them
grafted on his body. Walks in the middle of the room
astonished silence i imagine and the first word which
is heard? Peace...be ...with you. You my disciples. It
has the strength and creative force of the first word
in Genesis: the Verbum making creating the
world...fiat Lux---the Light the Verbum the same
Spirit which descended in the Incarnation to become
Verbum made flesh now again Holy Spirit but still
bearing the wounds inflicted to the human body for the
Benefit of our souls is illumining the darkness of the
hearts of those who were closest to him in the
redeeming mission. Their hearts are in hell..pain
disbelief even... afraid it seems to go out and spread
that very same Word they had been entrusted to preach.
Then Jesus spreads that Light peace into their hearts
breathes out the Holy Spirit...in forgiving them he
empowers them to bring the same forgiveness. When in
their hearts they may very well have been shaken and
scared to have lost his trust.He recreates 'Heaven' in
their souls and 'Heaven' he empowers them to restore
in the world outside. Thanks for the question...it
roots again the Peace into its roots forgiveness
understanding others hearts and intentions. Such a
routine gesture in the Liturgy ...thank you for
helping me discover its full meaning :)

Why do you think Jesus chose, after he rose, to show Himself first to Mary Magdalene?
It was no choice on his part. Who was the first one to run to the tomb early in the morning eagerly looking for him? who had treasured his words no even a comma lost?the disciples left and went home not seeing him. She stood there weeping her tears watering her Hope and strenghetning her Faith. And she was rewarded seeing him risen although she was too shaken to be able to recognise him. However much believe you have you dont witness a resurrection every day.

Why did Jesus“ penalty for "sin" need to include physical and emotional pain - why not just spiritual separation from God?
Because as humans we can suffer from those three dimensions of pain: physical, emotional, and spiritual.  Altogether, they reach the greatest magnitude of sacrifice.  Jesus really did suffer all those in a brutal way, because I believe the evil itself had the opportunity of a revenge.  It's not that plain and straight to understand the complexity of the pain that Jesus went trough.  It is by grace that we can understand the pain He went trough.  Jesus won His death with His resurrection, and He invites us to take part in winning this glory.  It's not free.  It is available and we must work for it with love in mind by following Christ.  We can never utter words like: "Jesus does not understand my pain!"  He does.
