Why were the religious leaders so upset that Jesus would heal on the Sabbath (religious day off)?

Because they took the law of the Sabbath to the extremes. In addition they were very jealous of Jesus.

What was Mary feeling in her heart after she heard the report from shepherd about many singing angels?

She was storing these reports mentally away. She was probably a little frightened and overwhelmed at the responsibility of raising such an important Child. She was also probably thankful to God for giving her the blessing of raising such an important Child.
