What was Jesus trying to teach people when He deliberately violated the Sabbath in order to heal people?

That it proper to do good on the Sabbath and that He (Jesus) is Lord of the Sabbath.

Why do Jesus`s enemies keep demanding a sign? Why doesn`t Jesus do a miracle for them?

Jesus' enemies keep demanding a sign because they do not believe Jesus is a Messiah and want to test Him out and find fault in Him so they can arrest Him. For Jesus knows their evil thinking so He doesn't do any miracle for them.

Why did Jesus repeat this miracle, here feeding the 4000, after previously feeding the 5000?

Because Jesus has compassion on the multitudes who hadn't eat for three day following Him, meanwhile He wants to ensure the desciples know that when in need just ask God and He will provide.
