Why do you think Jesus chose to appear to the disciples in this way? this appearance is similar to the time when Jesus was recruiting his disciples among the fishermen. In appearing this way he is sort of coming full circle. Close to the end of this appearance Jesus gives them advice on how to cast their nets so that they can catch many fish. This is symbolic for the disciples future role in being "fishermen of Men" and spreading the word of God amongst people
