Why would someone or something try to snatch sheep out of Jesus` hand?
Someone or something would try to snatch sheep out of Jesus` hand if they thought their position or livelihood were being threatened. Jesus was holding their way of being up to the light and it was becoming very, very uncomfortable for them to continue in their lives of sin while claiming to be religious.

Unbelief of the Jews
Jesus answered them, "I told you (the Jews), and you don't believe. The works that I do in my Father's name, these testify about me. But you don't believe, because you are not of my sheep, as I told you. My sheep hear my voice, and I know them, and they follow me. I give eternal life to them. They will never perish, and no one will snatch them out of my hand. My Father, who has given them to me, is greater than all. The Father and I are one." Then the Jews took up stones again to stone him. They said, We do not stone you for work, but for blasphemy: because you, being a man, make yourself God." Jesus answered them,"You blaspheme,' because I said, 'I am the Son of God?

The Unbelief of the Jews
The Jews did not believe in Jesus because he wasn't God, but he was in fact sent by God to do His work in His name.  He warned them that if they can't believe that he was sent by God and the works are of God, then how can you receive the blessings.  The Jews thought Jesus was cursing (blashpeming) against God because he was sent to do His work, but he never took credit for the work.  He always said his works were words and commandments from God.  He wanted them to understand and believe that the Father God was in him, therefore, he is able to do the work on behalf of God.

When we know Jesus and believe in him we are protected
Jesus was saying that after all the good works that he had done people still didn't believe that he was son of man. That when we know him we will know the differents between right and wrong. We will know his voice and he will know ours when we pray. That God will protect us from our enemies and willn't fall into traps by the enemy. God willmprovide for us when we believe in him and obey his word.

The Jews and the followers of Jesus are the children of Abraham.
God said that Abraham`s prosterity will very much thrive. In order to understand the Old Testament, the followers of Jesus can study very much it from the Jews too,I think.

John 10:27

I believe that Jesus is not just merely making a statement, but He is giving us a promise of eternal life as long as we follow His commandments.

Why would someone or something try to snatch sheep out of Jesus` hand?
Because the sheep don`t have faith in the shepherd and they are hard to be convinced by the good deeds of the shepherd.

The Unbelief of the Jews

It was the Feast of the Dedication at Jerusalem. It was winter, and Jesus was walking in the temple, in Solomon's porch. The Jews therefore came around him and said to him, "How long will you hold us in suspense? If you are the Christ, tell us plainly."
Jesus answered them, "I told you, and you don't believe. No one is able to snatch them out of my Father's hand. I and the Father are one."
Therefore Jews took up stones again to stone him. Jesus answered them, "I have shown you many good works from my Father. For which of those works do you stone me?"
The Jews answered him, "We don't stone you for a good work, but for blasphemy: because you, being a man, make yourself God."
Jesus answered them, "Isn't it written in your law, 'I said, you are gods?' If he called them gods, to whom the word of God came (and the Scripture can't be broken), do you say of him whom the Father sanctified and sent into the world, 'You blaspheme,' because I said, 'I am the Son of God?' If I don't do the works of my Father, don't believe me. But if I do them, though you don't believe me, believe the works; that you may know and believe that the Father is in me, and I in the Father."
They sought again to seize him, and he went out of their hand. He went away again beyond the Jordan into the place where John was baptizing at first, and there he stayed. Many came to him. They said, "John indeed did no sign, but everything that John said about this man is true." Many believed in him there.
